Ingredients for 2 servings:
- 1 stalk(s) cheese, Harzerkäse 250 g
- 1 small onion(s)
- 1 clove(s) garlic
- 1 bunch of chives
- 1 tbsp oil, neutral
- 1 tsp, heaped mustard, medium hot
- 1 tsp caraway seeds, chopped
- 1 pinch(s) of paprika powder, hot
- 1 pinch(s) of sugar
- 1 pinch of salt
- 1 tsp pepper, ground
- 4 slice(s) bread(s) , (fresh wholemeal bread), toasted

Cut the Harzer cheese into thin slices. Peel the onion and slice into rings. Finely chop the garlic. Chop the chives into small rings. Pour the oil into a cup and mix well with the garlic, mustard, caraway, paprika, sugar, salt, and pepper. Fold in the chives. Arrange the cheese slices on a plate in a shingle pattern and arrange the onion rings on top. Drizzle the marinade evenly over the cheese and season with freshly ground pepper. Let it sit in the refrigerator for a few hours. Remove from the refrigerator 1 hour before serving and bring to room temperature. Serve with the bread.
