Hand cheese salad

Ingredients for 4 servings:

  • 400 g cheese, mature hand cheese (or sour milk cheese)
  • 1 large onion(s)
  • 2 spring onions
  • 4 tbsp vinegar, mild
  • 4 tbsp apple cider or white wine
  • 4 tbsp olive oil
  • 1 pinch of salt
  • 1 pinch(s) of pepper
  • 200 g cherry tomatoes
  • 3 tbsp parsley
  • 1 tsp caraway seeds

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Dice the hand cheese and place it in a bowl. Dice the onions, wash and trim the spring onions, and slice them into thin rings. Add the onions to the cheese along with the vinegar and wine, oil, salt, pepper, and caraway seeds. Mix everything well, cover, and let it sit for 1/2 hour. Wash and halve the tomatoes, then mix them into the cheese. Stir in the parsley and serve.
