Braised cucumbers Berlin style

Ingredients for 4 servings:

  • 5 large pickled cucumbers (country cucumbers), peeled, diced
  • 1 tbsp olive oil
  • 1 large onion(s)
  • 259 g ham, raw, cut into cubes
  • e.g. salt and pepper
  • 1 pinch(s) of sugar
  • 1 shot of white wine vinegar
  • ½ bunch parsley

Instructions

Working time approx. 8 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 18 minutes

Peel the onion and dice it into small cubes, then fry it with the bacon in 1 tablespoon of olive oil. Sprinkle with a pinch of sugar and let it caramelize slightly. Add the cucumber cubes and simmer. Then deglaze with a little vinegar and let it cook briefly. Add a little water and simmer for about 10 minutes. Season to taste with salt and pepper, sprinkle with parsley, and serve. Serve with boiled potatoes or mashed potatoes.
