Ingredients for 4 servings:
- 500 g onion(s), finely diced
- 800 g potatoes, diced
- 50 g butter
- 1 liter vegetable broth
- 2 tbsp mustard
- salt and pepper
- 4 sausages, fresh
- Oil, for frying
- Chives, fresh
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Sauté the onions and potatoes in butter, add the broth, and cook for about 15 minutes until soft. Mash everything and season with mustard, salt, and pepper. Fry the sausage in a pan until crispy brown, slice, and add to the soup. Garnish with fresh chives, if desired.
