Grandma's potato soup

Ingredients for 2 servings:

  • 350 g potatoes
  • 500 ml vegetable broth, instant
  • 2 sausages (Wiener)
  • 1 tbsp oil
  • 1 half onion(s)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and dice the potatoes and half an onion. Heat 1 tablespoon of oil in a saucepan and add the diced potatoes and onion. Once the onions are translucent, add the 500 ml vegetable stock. Cover and simmer over medium heat for about 10-12 minutes. Purée with a hand blender and season with salt and pepper. Cook for another 3 minutes. Meanwhile, chop the two Vienna sausages, add them to the soup, and warm them in the potato soup. Serve hot.
