Potato and carrot stew with smoked pork

Ingredients for 1 servings:

  • ¼ celeriac
  • 3 m.-large carrot(s)
  • 1 leek(s)
  • 2 m.-sized potatoes
  • 350 ml vegetable stock
  • 200 g smoked salmon
  • some parsley
  • salt and pepper
  • 1 tbsp oil for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Slice the carrots, cut the leek into rings, and dice the celery and smoked pork into small cubes. Peel the potatoes and dice them as well. Heat the oil in a pan and sauté the vegetables and potatoes. Deglaze the vegetables with vegetable stock and simmer for 20 minutes. Finely chop the parsley. Purée the soup, leaving more or fewer pieces whole if desired, and season with salt and pepper. Add the smoked pork and stir in. Serve the potato and carrot stew with the parsley and enjoy. This recipe is designed for 1 serving (= 2 plates) and thus has a 10-point rating on WW.
