Ingredients for 4 servings:

  • 1 kg potatoes
  • 1 large onion(s)
  • 60 ml white wine vinegar, approx. (depends on the type and your own taste)
  • salt and pepper
  • 1 pinch(s) of sugar
  • 1 tbsp parsley, chopped
  • 2 pickled cucumbers
  • Caraway (it’s important!)
  • 3 tbsp oil

Instructions

Working time approx. 45 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 45 minutes

Boil the potatoes with their skins on with salt and caraway seeds, peel, and slice while still warm. Place in a bowl and mix with the following marinade: Diced onion, cucumber, salt, white pepper, vinegar, and oil are placed in a little water and cooked until the onion is soft. Season again with the spices, pour over the potatoes, and mix. Let cool for about 2 hours, taste, and adjust seasoning if desired. Once the salad has cooled, sprinkle with parsley and serve.
