Potato and minced meat pan

Ingredients for 2 servings:

  • 300 g potatoes, small
  • 2 small spring onions
  • 2 tbsp olive oil
  • 300 g minced meat, mixed
  • 2 tbsp curry powder
  • 250 ml vegetable stock
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and halve or quarter them, depending on their size. Halve the spring onions lengthwise. Cut the white and light green parts diagonally into 4 cm pieces. Heat the olive oil in a pan. Brown the minced meat in batches. Add the potatoes. Season with curry, salt, and pepper, and deglaze with stock. Cover and cook for about 20 minutes. Add the spring onions and cook for another 5 minutes.
