Lamb's lettuce with bacon dressing

Ingredients for 2 servings:

  • 200 g potatoes
  • 500 g lamb’s lettuce
  • 1 onion(s)
  • 200 g bacon, streaky
  • 3 tbsp oil
  • 1 bunch of parsley
  • 1 bunch of chives
  • salt and pepper
  • Vinegar
  • Sugar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Delicious Rhineland “poor man’s food”

Wash and peel the potatoes and boil in salted water until tender. Meanwhile, trim and wash the lamb’s lettuce and place it in a bowl. Peel the onion and dice it into small pieces, as well as the bacon. Add oil to a pan and fry the onion and bacon cubes until crispy. Mash the potatoes while they’re still hot and add a little water to create a creamy sauce. Add the chopped herbs, bacon, and onion. Season to taste with vinegar, salt, pepper, and sugar. Arrange the salad on plates and drizzle with the warm dressing.
