Lentils and spaetzle with strings

Ingredients for 4 servings:

  • 250 g lentils
  • ¾ liter of water
  • 3 tbsp oil
  • 1 tbsp tomato paste
  • 2 tbsp vinegar
  • 1 carrot(s)
  • Salt and pepper, ground.
  • 1 tbsp meat broth, clear, (instant)
  • possibly wine, red
  • 4 pairs of sausages (string sausages)
  • Paprika powder

Working time approx. 50 minutes; Total time approx. 50 minutes

A typical Swabian dish

Peel and wash the carrot and cut into small cubes. Place water with oil, tomato paste, and vinegar in the pressure cooker, add the carrots, and bring to a boil. Add the lentils, stir once, close the pot, and cook the lentils for 20 minutes. In the meantime, prepare the spaetzle (I’m not going to post a recipe here, as some excellent spaetzle recipes have already been posted here!). Let the sausages simmer in hot water for 10 minutes. Let the pressure cooker cool and then open it. Season the lentils with salt, pepper, paprika, and meat broth, and add red wine to taste. Place the sausages on top of the lentils and serve with the spaetzle. A typical Swabian dish, the Swabians called it: “Soida mit Lensa und Schpätzle” (Swabian noodles with lentils and noodles).
