Ingredients for 4 servings:
- 100 g bacon, diced
- 300 g carrot(s)
- 2 tbsp oil
- 1 onion(s)
- ½ liter vegetable broth
- 150 g lentils, red
- 1 bunch of spring onions
- 8 sausages (poultry sausages)
- 1 can of lentils with soup vegetables (800g)
- 3 tbsp vinegar
- salt and pepper
- 1 bay leaf
- marjoram
- Sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Clean, wash, and chop the carrots. Peel and dice the onion. Heat the oil and fry the bacon cubes. Then add the diced onion and sauté briefly. Add the chopped carrots and sauté. Now pour in the stock, add the bay leaf, and cook for about 10 minutes. In the meantime, wash the red lentils and the spring onions and chop them into small pieces. After 10 minutes, stir in the lentils and spring onions and cook for another 5 minutes. Slice the sausages and stir them into the soup vegetables along with the can of lentils. Cook for about 5 minutes and season to taste with the specified spices. If the stew seems a bit too dry, add a little more water. Finally, fish out the bay leaf! Spätzle goes best with this. For 4 people, I always boil 250g and stir it in immediately afterwards!
