Pide from the pizza oven

Ingredients for 8 servings:

  • 1 kg flour
  • 1 packet of fresh yeast
  • 3 tbsp oil
  • 1 tbsp salt
  • 4 tbsp milk
  • 600 ml water, lukewarm
  • 200 g sheep’s cheese
  • ½ bunch parsley, fresh
  • 1 egg(s)
  • ½ garlic sausage
  • 100 g cheese, grated, e.g. Gouda
  • some butter to spread on the baked pides

Instructions

Working time approx. 1 hour; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 30 minutes

For the dough, knead all the ingredients together to make a yeast dough. Then, cover the dough and let it rise in a warm place for 30 minutes. After the resting time, flour the work surface and form the dough into eight balls. For the filling, mash the feta cheese with a fork. Finely chop the parsley. Mix the feta cheese, parsley, and egg. For the garlic sausage filling, slice the garlic sausage and grate the cheese. Roll out the balls into oval shapes. Fill two doughs each with half of the feta cheese filling. Fold the sides in. Cover the other doughs with the garlic sausage and sprinkle the cheese on top. Fold the edges in again. Bake the filled pide in a pizza oven for about five minutes and eat warm. Brush the finished pide edges with butter. Pide tastes best when baked in a stone oven. I bake them in a pizza oven, and they taste like they came from a stone oven. The Ayran drink goes very well with pide. Have fun baking.
