Tomato salad with pomegranate syrup – Gavurdagi salad

Ingredients for 2 servings:

  • 3 medium-sized tomatoes, finely chopped
  • 1 small onion(s), finely chopped
  • 1 cup flat-leaf parsley, finely chopped
  • 50 g walnuts, chopped into pea-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp pomegranate syrup
  • 1 tsp Pul Biber (dried chili flakes)
  • salt and pepper
  • 2 tbsp lemon juice

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes

Rub the chopped onions with salt, chili flakes, and pepper. Add the tomatoes, parsley, and walnuts. Mix in the pomegranate syrup, lemon juice, and olive oil. Let it simmer for about 2-3 hours. A delicious addition to a mezze.
