Oriental chickpea salad

Ingredients for 2 servings:

  • 1 can chickpeas
  • 1 bunch parsley, flat
  • 1 bunch peppermint
  • 1 small onion(s)
  • 1 spring onion(s)
  • 1 clove(s) garlic
  • 2 tomatoes
  • 3 mushrooms
  • 1 bell pepper(s)
  • some cucumber(s)
  • 1 small chili pepper(s) or chili flakes
  • some coriander, ground
  • some paprika powder
  • some vinegar
  • some oil
  • salt and pepper
  • possibly lemon juice or lime juice

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with flat-leaf parsley, peppermint and coriander

Drain the chickpeas and place them in a bowl. Wash and roughly chop the parsley and mint, and add them to the chickpeas. Finely chop the tomatoes, bell pepper, cucumber, spring onion, onion, and mushrooms and add them to the dish. Now finely chop the garlic and chili (for those who like it spicy) and mix everything well. Add a little vinegar, oil, salt, and pepper, and season with paprika and coriander. Add a little more coriander, especially so you can really taste it; together with the mint, it gives the dish a fresh, exotic touch. If you have a lime or lemon on hand, you can add their juice; it tastes even better.
