Ingredients for 4 servings:
- 1 kg zucchini
- 3 small onions
- 3 eggs
- 1 tbsp mint, dried
- 1 clove(s) garlic
- 150 g flour or as needed
- salt and pepper
- Paprika powder, hot
- Oil for frying

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
quick & easy
Coarsely grate the zucchini and onions. Place the zucchini in a kitchen towel and squeeze out any excess water. Add the remaining ingredients, season well, and knead into a thick batter. Add about 2-3 tablespoons of batter to a nonstick pan with a little oil. Serve the fritters with garlic yogurt and rice.
