Turkish soft rolls

Dissolve the yeast in the lukewarm milk. Put the flour in a bowl and add the lukewarm yeast milk. Separate one egg and set the yolk aside. Add the egg white and the remaining ingredients to the bowl and mix. Let the finished dough rest in a warm place for 1 hour. The dough should be softer than normal yeast dough. Brush the work surface with a little oil. Take equal-sized portions of the dough. Shape into the desired rolls. Line a baking tray with baking paper and place the shaped dough on it. Let it rest for another 10-15 minutes. Whisk the egg yolk and a little milk and pour over the dough pieces. Sprinkle with black cumin and/or sesame seeds and bake at 200°C for 25-30 minutes using top/bottom heat. You can also fill the rolls, for example with feta cheese, minced meat or a potato and onion mixture. Black tea is traditionally drunk with these rolls.
