Bulgur salad

Ingredients for 2 servings:

  • 175 g bulgur, coarse
  • 1 liter broth (instant or cubes)
  • 1 onion(s)
  • 1 spring onion(s)
  • 1 jar peppers, pickled roasted
  • 1 small zucchini
  • 50 g peas, frozen
  • Herbs
  • salt and pepper
  • Garlic
  • oil
  • Vinegar

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Bring the bulgur and broth to a boil, simmer for about 6-8 minutes. Peel the onion, halve it, and slice it into thin strips. Add it to the bulgur. Cover and let it simmer for about 30 minutes. In the meantime, finely chop the bell pepper (fresh ones are fine), spring onions, and zucchini. Mix the remaining ingredients into a sauce. Drain the bulgur and reserve the liquid. Mix with the vegetables and sauce. Add broth, if desired. Variations: finely chopped peppermint, lemon, dill, cumin, or other vegetables. This tastes great without oil in the sauce!
