Ingredients for 1 servings:

  • 375 g sugar
  • 1 tsp cinnamon powder
  • 1 pinch of salt
  • 500 g flour
  • 4 egg yolks
  • 200 g hazelnuts or almonds, ground
  • e.g. jam (raspberry or currant), for filling
  • e.g. powdered sugar, for dusting

Instructions

Working time approx. 40 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 8 minutes; Total time approx. 2 hours 48 minutes

Combine all ingredients to form a shortcrust pastry, wrap in aluminum foil, and chill for 2 hours. Then remove from the refrigerator and roll out the dough thinly in portions, cut out cookies, and place them on a greased baking sheet. Bake in the oven at approximately 180°C for 8-10 minutes. While still warm, spread jam on each cookie and place an unfrosted cookie on top. Coat the assembled cookies in powdered sugar and let cool.
