Ingredients for 4 servings:

  • 500 g anchovy fillet(s), fresh
  • 250 ml vinegar (wine or herb vinegar), white
  • 1 tsp salt
  • 4 clove(s) garlic, chopped
  • 2 tbsp parsley, finely chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Natural boquerones

Remove the head, giblets, and bones. (After removing the head, pull the backbone toward the tail. This creates two fillets!). Wash and spread the fish in a glass bowl. Cover with vinegar and add salt. Marinate for 8 to 24 hours, until the fillets are white and crisp. Then drain the marinade and pour over the olive oil and garlic. Sprinkle with parsley.
