Ingredients for 4 servings:
- 125 ml olive oil
- 100 ml water
- 1 lemon(s), the juice
- 2 cloves garlic
- 6 peppercorns
- ½ tsp salt
- 1 bay leaf
- 500 g mushrooms, fresh, small to medium-sized

Working time approx. 20 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 20 minutes
Antipasti
Clean the mushrooms. Bring all ingredients except the mushrooms to a boil in a saucepan over moderate heat. Reduce the heat, cover, and simmer gently for 15 minutes. Then strain the marinade through a fine sieve and return it to the pan. Add the mushrooms to the marinade and let it marinate, ideally overnight.
