Mushrooms in Sherry

Ingredients for 3 servings:

  • 250 g mushrooms, small heads
  • 3 spring onions
  • 2 garlic cloves
  • 50 ml sherry
  • 1 dashes lemon juice or sherry vinegar
  • Salt
  • pepper
  • ½ bunch parsley, flat
  • olive oil

Instructions

Working time approx. 15 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 20 minutes; Total time approx. 3 hours 35 minutes

Tapas

Finely slice the spring onions and garlic cloves and sauté in olive oil. Add the mushrooms and sauté for about 10 minutes, adding a little more oil if necessary. Deglaze with sherry and season to taste with lemon juice or sherry vinegar, salt, and pepper. Chop the flat-leaf parsley, add it, and let it marinate for a few hours. This batch is enough for 4 people if you’re serving multiple tapas.
