Tony's fish fillet with onions and garlic, cooked in the oven

Ingredients for 1 servings:

  • 2 fish fillets (e.g. pangasius, pollock or plaice, approx. 250 g)
  • 1 tomato(s)
  • 1 onion(s), red
  • some garlic
  • 2 spring onions
  • 2 tbsp olive oil
  • salt and pepper
  • Paprika powder

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

First, mix some olive oil with some fresh garlic in a small bowl. Dice the tomato, a small red onion, and 1-2 spring onions and add them to the oil. Brush some of this marinade onto a baking dish. Season the fish fillets with salt, pepper, and paprika and place them in a baking dish. Spread the remaining marinade over the fillets. Cook in a hot oven at 180°C (top/bottom heat) for 30 minutes. Adjust the cooking time slightly depending on the amount of fish. Overcooked fish will become dry and flavorless, so feel free to taste test it a few minutes beforehand.
