Ingredients for 2 servings:
- 1 eggplant(s), diced
- 1 zucchini, diced
- 2 bell peppers, red and yellow, diced
- 1 piece(s) garlic sausage, Spanish (chorizo), diced. Quantity as desired
- 1 bunch parsley, chopped
- salt and pepper
- 1 pack of diced feta cheese
- 1 can tomato(s) (Pizza tomatoes)
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
First, fry the eggplants in a nonstick pan without fat, then add the bell peppers and zucchini. Once the vegetables begin to brown, stir in the chopped parsley, tomatoes, and chorizo. Season with salt and pepper. Simmer until the vegetables are tender. Finally, stir in the diced feta cheese, cover the pan, and wait until the feta cheese begins to melt. Serve with bread.
