Moorish meat skewers

Ingredients for 4 servings:

  • 800 g pork fillet(s)
  • 100 ml olive oil
  • 50 ml dry sherry
  • ½ tsp cumin, ground
  • ½ tsp paprika powder, hot
  • ½ tsp sweet paprika powder
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Cut the pork fillet into approximately 3 cm cubes. Mix together the olive oil, sherry, cumin, both types of paprika, salt, and pepper. Pour the marinade over the fillet cubes and let them marinate for at least 3 hours (preferably overnight). Remove the meat cubes from the marinade and let them drain. Place them on wooden or metal skewers and fry in a pan, turning them several times. If you like, you can also grill the skewers, but they should be made of metal. Serve with a paprika dip, salad, and baguette. TIP: Dip wooden skewers in oil first to prevent the meat from sticking to them!
