Ingredients for 4 servings:

  • 6 onions, red
  • 4 tbsp butter
  • 2 bell peppers, red and green
  • 200 g sausage (chorizo, alternatively paprika salami)
  • 50 g black olives
  • 1 tbsp thyme, fresh
  • 1 tbsp parsley, chopped
  • 1 tbsp flour
  • 250 ml milk or whipped cream
  • 100 g sheep’s cheese (Manchego, at least 3 months old)
  • Paprika powder, sweet

Slice the onions into rings. Heat 3 tablespoons of butter in a pan and fry the onions until golden brown. Cut the bell peppers into strips and the chorizo ​​into pieces. Arrange the onions, bell peppers, chorizo, and olives in a greased gratin dish and season with salt, pepper, thyme, and parsley. Melt the remaining butter, sprinkle in the flour, cook until golden brown, then gradually stir in the heavy cream/milk. Season, simmer for 5 minutes, and pour over the vegetables. Grate the cheese and sprinkle the gratin with paprika. Bake for 20 minutes at approximately 200°C.
