Ingredients for 1 servings:

  • ¾ cup(s) vinegar
  • ½ cup(s) water
  • ½ cup(s) sugar
  • 4 fish fillets (matjes fillets)
  • 2 onions, red
  • 1 piece(s) horseradish, fresh
  • 1 carrot(s)
  • 1 piece(s) ginger root
  • 2 tsp all-spice
  • 2 tsp mustard seeds
  • 3 bay leaves

Bring the vinegar, water, and sugar to a boil in a saucepan. Once the sugar has completely dissolved, let the marinade cool to room temperature. Cut the herring fillets into approximately 2 cm wide pieces. Thinly slice the peeled red onions, the peeled carrot, the peeled horseradish (a piece approximately 4 cm long), and the ginger root (approximately 1 to 2 cm). Line the bottom of a 1-liter jar with a layer of onions. Layer the herring pieces, carrots, ginger root, and horseradish on top. Add allspice, mustard seeds, and a bay leaf. Repeat this process several times. There should be 3 to 4 layers. Pour the cooled marinade over the contents of the jar, ensuring it is completely covered. Close the jar tightly, preferably airtight, and refrigerate for 2 to 3 days before eating. It looks particularly decorative when a few slices of onion and carrot are placed vertically along the rim of the glass and covered with a thin layer of onions and carrots. It can be served in the glass or arranged decoratively. It’s suitable as an appetizer or for a cold buffet.
