Salmon and cucumber roulades with horseradish cream

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 200 g salmon (smoked salmon)
  • 50 g horseradish (horseradish cream)
  • e.g. roe (lumpfish roe), red or black

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Using a cheese slicer, slice the cucumber lengthwise. Reserve the first slices for another dish. Top the cucumber slices with salmon slices. Drizzle with horseradish cream, roll up, and stand upright. Garnish with the roe as a caviar substitute. Note: I stole this idea from Ulrika Jisland and Anna Jonasson in Sweden. But I have permission from these lovely ladies to publish this ingenious recipe.
