Swedish Yule cookies

Ingredients for 1 servings:

  • 140 g butter
  • 1 pinch of salt
  • 70 g sugar
  • 2 egg yolks
  • 220 g flour
  • 1 pinch of baking powder
  • 1 egg white
  • 50 g cinnamon sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours

Tea biscuits, makes about 50 pieces

Cream the butter with sugar, egg yolk, and salt until fluffy. Sift the flour and baking powder together and knead into a dough. Wrap the shortcrust pastry in foil and chill. Knead individual portions of the dough until smooth. Roll out the dough to about 3 mm thick and cut out round cookies with a diameter of 6 cm. Place the cookies on baking paper, brush with beaten egg white, and sprinkle with cinnamon sugar. Bake the Yule cookies at 160°C (top/bottom heat) for about 10-15 minutes until golden brown.
