Ingredients for 4 servings:
- 1 kg potatoes, small (e.g. “Annabelle”)
- 200 g smoked salmon
- 1 m.-sized apple (e.g. Braeburn)
- 3 m.-large gherkins
- 4 tbsp Miracle Whip Balance
- 1 tbsp salt and pepper
- pepper
- 1 tbsp sugar
- 1 bunch of dill, fresh or 25 g frozen

Wash the potatoes and cook with the skin on. If you are using small potatoes without eyes or sprouts, you can leave the skin on after cooking and halve or quarter the potatoes (depending on size). Once the potatoes are cut, sprinkle salt (add a little at a time, seasoning as needed!), sugar, and pepper (use as needed) over the potatoes. Then dice the cucumber and apple and add them. Finally, roughly chop the salmon, add the chopped or frozen dill, and mix with Miracle Whip. You can also use sour cream or mayonnaise instead of Miracle Whip. The salad is more digestible, however, with less fat. The salad is ideal for New Year’s Eve, Easter, as a light main meal, or for a buffet. The whole thing can be eaten immediately, with the potatoes still warm, but tastes better if it is refrigerated for 3 hours first. Season to taste before serving, as the potatoes absorb a lot of salt. Tip: Small potatoes are usually available loose. Since potatoes are originally small, the smaller varieties often have better taste and better quality.
