Ingredients for 4 servings:
- 400 g matjes fillet(s)
- 1 onion(s), white
- 1 apple, red
- 3 gherkins
- 100 ml cucumber water
- 800 g jacket potatoes from the previous day
- 1 bunch of spring onions
- 200 g sour cream
- 200 g whipped cream
- some black pepper, freshly ground
- some lettuce leaves, small, young
Instructions
Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes
Rinse the herring fillets under cold water, pat dry, and cut into pieces. Peel the onion, halve it, and slice it into thin strips. Rinse the apple, quarter it, remove the core, and cut the apple quarters into thin wedges. Thinly slice the gherkins. Peel and slice the potatoes. Trim and rinse the spring onions, then slice them diagonally into thin rings. Carefully combine all the prepared ingredients in a large bowl. Mix the sour cream, whipping cream, and pickle juice together, and season with a few grinds of freshly ground black pepper. Carefully toss the dressing with the salad in the bowl and let it all sit in the refrigerator for 1 hour. Season to taste before serving and garnish with some small, young lettuce leaves. Serve with fresh baguette.
