Ingredients for 6 servings:

  • 400 g cottage cheese (Swedish: Keso)
  • 4 m.-sized eggs
  • 50 ml sugar
  • 100 ml ground almonds
  • 50 ml flour
  • 300 ml whipped cream
  • 1 tbsp butter, for the baking pan
  • e.g. compote (strawberry, raspberry or wild berry compote
  • e.g. whipped cream

Småland dessert

Preheat the oven to 175°C (top/bottom heat). Crack the eggs into a large bowl, add the sugar, and beat with a hand mixer until creamy. Gradually stir in the ground almonds, flour, and cottage cheese. Whip the cream in another bowl until stiff peaks form, then fold it into the batter. Grease a springform pan (26 cm in diameter) or a rectangular baking dish (approx. 30 cm long) with butter. Pour in the batter. To check that you’ve used the correct pan, the batter should now be 5 cm high. Bake the Ostkaka on the middle rack for 1 hour. It’s ready when the top is lightly browned. Serve warm with strawberry, raspberry, or wild berry compote and whipped cream.
