Ingredients for 4 servings:
- 700 g low-fat curd cheese
- 50 g raisins
- 50 g almonds
- 2 egg yolks
- 100 g sugar
- 1 packet of vanilla sugar
- 150 g cream
- 125 g butter, soft
Instructions

Easter dessert, quark dish
Drain the quark overnight. Cook and peel the almonds, then roast them. Finely chop them along with the candied fruit, ideally through a meat grinder. Set aside 1 tablespoon of the mixture. Wash and dry the raisins. Beat the egg yolks with the sugar until frothy. Pour in the cream and continue beating until thick. Mix in the vanilla sugar, softened butter, and quark. Finally, fold in the raisins, almonds, and candied fruit. Line a dish with cheesecloth or a smooth kitchen towel, add the Pascha, and cover with the ends. Place a small plate with weights on top and let it rest in the refrigerator for 24 hours. Turn the Pascha out and garnish with the remaining almonds and fruit. This dessert is truly rich and filling, yet incredibly delicious.
