- 150 g cream cheese
- 200 ml cream
- 200 g desiccated coconut

very quick, very tasty, no baking
Spread a thin layer of cream cheese on the flat side of one cookie, then press a second cookie against the flat side. The whole thing is rolled in cream (once is enough, otherwise they’ll be too mushy) and then coated in desiccated coconut. The cookies taste best when they’ve been left to rest for a few hours, so the cream has spread evenly throughout the cookies.
