Apple-Cinnamon Oladushki

Ingredients for 4 servings:

  • 500 ml kefir
  • 2 eggs
  • 3 tbsp sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 apples
  • 1 tsp cinnamon or to taste
  • Flour as needed
  • Oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Combine the kefir and baking soda in a bowl and mix. In another bowl, combine the eggs, sugar, and salt. Add the kefir-baking soda mixture and stir in. Gradually add the flour and whisk until the dough has a thick (sour cream-like) consistency. Then let it rest for 10-15 minutes. Meanwhile, grate the apples. Once the dough has rested, add cinnamon to taste and the grated apples. Set the stove to heat 5. Add oil to a large frying pan and drop small, not too thick, dollops of batter into the pan. When you see a brown edge, turn the oladushki with two forks and finish cooking.
