Apple fritters with vanilla sauce

Ingredients for 4 servings:

  • 700 g apples
  • 50 g sugar
  • 1 tbsp lemon juice
  • 2 tbsp rum
  • 200 g flour
  • 2 eggs
  • 125 ml apple juice
  • 125 ml white wine
  • 1 pinch of salt
  • 1 organic lemon(s), grated peel
  • Fat for frying
  • Powdered sugar for sprinkling
  • 500 ml milk
  • 40 g sugar
  • 20 g cornstarch
  • 2 egg yolks
  • 1 vanilla pod(s)

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

First prepare the vanilla sauce: Take 2-3 tablespoons of the milk to mix the cornstarch. Bring the rest to a boil with the sugar and the vanilla pod, sliced ​​in half lengthwise. Meanwhile, mix the cornstarch with the reserved milk and the 2 egg yolks. Remove the vanilla pod from the boiling milk. Scrape the vanilla seeds into the milk and thicken the liquid with the mixed cornstarch, stirring vigorously. Let the sauce boil up a few times and then stir until cold. Apple fritters: Wash and peel the apples and core them. Cut the apples into 1 cm thick rings, place them in a bowl with sugar, sprinkle with lemon juice and rum, and let them marinate, covered. Put the flour in a bowl, add the eggs, apple juice, white wine, salt and grated lemon zest and mix everything into a thick batter. Let it sit for about 30 minutes. Drain the marinated apples well, dip them in the batter and fry them in hot oil. Turn the cakes over and bake until golden brown. Remove from the oven, drain briefly on kitchen paper, and arrange on a platter. Sprinkle with powdered sugar and serve immediately with the vanilla sauce.
