Ingredients for 4 servings:

  • 8 slice(s) beef fillet(s), thin
  • 1 onion(s)
  • 1 garlic clove(s)
  • 200 ml Madeira, dry
  • 5 tbsp olive oil
  • 50 g butter
  • Salt
  • Cayenne pepper or piri-piri
  • 1 tbsp parsley, chopped
  • 2 bananas
  • 3 tbsp olive oil
  • 8 cherry tomatoes

Working time approx. 20 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 20 minutes

Madeira-style fillet

Place the fillet slices in a shallow clay dish, sprinkle with the diced onion and finely chopped garlic clove, pour over the Madeira wine and olive oil, cover, and marinate in the refrigerator for a few hours. Remove the fillet slices from the marinade, pat dry, fry in butter until browned on both sides, and keep warm. Heat the marinade in the meat juices, season with salt, piri-piri or cayenne pepper, and chopped parsley, reduce well, and pour over the fillet slices. Peel the bananas, halve them, and fry on both sides in hot olive oil until golden brown, seasoning with a little salt and cayenne pepper. Briefly toss the cherry tomatoes in the hot olive oil. Arrange the fillet slices with the bananas and cherry tomatoes and serve.
