Ingredients for 4 servings:

  • 4 steaks
  • 5 garlic cloves
  • 1 tbsp vinegar (wine vinegar)
  • 4 slice(s) ham, raw
  • 3 tbsp olive oil
  • 150 g butter
  • 1 bay leaf
  • 1 tsp lemon juice
  • ½ cup brandy
  • Lemon(s) – slices
  • 4 eggs
  • Mixed pickles
  • salt and pepper
  • French fries

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Portuguese steak

Prepare a mixture of four crushed garlic cloves, wine vinegar, 1 tablespoon of olive oil, and plenty of pepper. Rub the steaks with it. Fry a garlic clove and a bay leaf in hot olive oil and 100g of butter for 1 minute, then remove and discard. Sear the steaks in the hot fat for 1 minute on each side, then reduce the heat and continue to sear for 2-4 minutes per side, seasoning with salt in between. Keep the steaks warm. Briefly sear the raw ham in the same fat. Place a slice on each steak. Discard half of the cooking fat. Deglaze the pan with brandy (let the alcohol evaporate), then mix with 50g of butter. Pour this spicy sauce over the steaks and ham. Serve with lemon wedges, French fries, fried eggs, and mixed pickles. Tip: Fried eggs are best cooked without salt in butter.
