- 600 g beef, for frying, diced
- 1 tbsp mustard, medium hot
- 6 garlic cloves
- 3 tbsp ketchup
- 200 ml broth

a typical, quick dish that is served in most bars on Madeira
This dish is quick to make and is served like this in most Madeiran pubs: a large platter with the meat and sauce in the middle, and fries, tomato slices, and a few olives around the outside. Heat oil in a pan and add the peeled garlic, whole or chopped. Let the garlic brown slightly, then add the meat in portions and fry until crispy, then remove and place on a plate. Once all the meat is cooked, add the mustard and ketchup to the hot pan and pour in the stock. Stir well, bring to a boil, and simmer gently. When the sauce has thickened slightly, season with salt and pepper. Add the meat again and heat quickly, then serve immediately.
