Moroccan Sesame Cookies – Ghriba Bahla

Ingredients for 1 servings:

  • 40 g sesame seeds, light
  • 170 g wheat flour type 405
  • ½ tsp cinnamon powder
  • 6 g baking powder
  • 1 pinch of salt
  • 160 g brown sugar
  • 50 g butter, room temperature
  • 50 g rapeseed oil
  • some lemon zest

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 14 minutes; Total time approx. 39 minutes

Toast the sesame seeds in a dry pan until light brown and let cool. Sift the flour, baking powder, cinnamon, and salt into a bowl. Mix in the sesame seeds. Add the butter, oil, and lemon zest and knead into a crumbly dough. Form 25 balls of the dough into the palm of your hand (do not roll), gently press down, and place them on a baking sheet lined with parchment paper. Preheat the oven to 190°C (top/bottom heat). Place the baking sheet in the upper third of the oven and bake for 12-14 minutes until light brown. Let cool on a wire rack.
