Oriental date cookies

Ingredients for 16 servings:

  • 100 g butter
  • 20 g brown sugar
  • 1 pinch of salt
  • 175 g flour (type 1050)
  • 3 tbsp rose water
  • 150 g date(s), dried, pitted
  • 20 g butter
  • 4 tbsp rose water
  • 100 g powdered sugar
  • 1 tbsp rose water

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Melt the butter and let it cool. Knead the sugar, salt, flour, and rose water into a dough. Chill. Finely chop the dates and heat the butter in a pan. Fry the dates for about 3 minutes. Stir in the rose water and simmer for 1-2 minutes until the fruit mixture becomes smooth. Divide the dough into 16 pieces and roll out into circles (about 9 cm in diameter) on a floured surface. Place some filling in the center, fold over, and form a round pastry. The seams should be well sealed. Place the cookies on a baking sheet (use baking paper) and bake at about 160 degrees Celsius for 25-30 minutes. If you like, you can make a glaze from 100g of powdered sugar and 1 tablespoon of rose water and cover the cookies with it.
