Ingredients for 1 servings:
- 40 g sesame seeds, light
- 170 g wheat flour type 405
- ½ tsp cinnamon powder
- 6 g baking powder
- 1 pinch of salt
- 160 g brown sugar
- 50 g butter, room temperature
- 50 g rapeseed oil
- some lemon zest

Toast the sesame seeds in a dry pan until light brown and let cool. Sift the flour, baking powder, cinnamon, and salt into a bowl. Mix in the sesame seeds. Add the butter, oil, and lemon zest and knead into a crumbly dough. Form 25 balls of the dough into the palm of your hand (do not roll), gently press down, and place them on a baking sheet lined with parchment paper. Preheat the oven to 190°C (top/bottom heat). Place the baking sheet in the upper third of the oven and bake for 12-14 minutes until light brown. Let cool on a wire rack.
