Strangely enough, sardines in oil rarely find their way into the kitchen. I learned this way of preparing them from a Peruvian woman after a wild night of partying. She told me it’s a great hangover cure. Sauté the onion in a little olive oil, drain the sardines in oil, add them, and fry. Add the chopped bell peppers, tomatoes, and crushed garlic, and sauté for about 15 minutes over medium heat. Season with salt and pepper, and squeeze the lemon over the top. Pour the sauce over the cooked spaghetti. Arugula with balsamic vinegar goes perfectly with it.
