Ingredients for 4 servings:
- 400g spaghetti or tortellini
- 200 g ham, raw
- 4 egg yolks
- 50 g butter
- salt and pepper
- 1 pinch of nutmeg
- e.g. Parmesan, freshly grated
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes
or Tortellini Carbonara – without cream
Cook the pasta in plenty of salted water until al dente. Dice the ham and fry in a little butter. Whisk the egg yolks in a large bowl with salt, pepper, and nutmeg. Cream the butter until fluffy and mix well with the egg yolks. Thoroughly stir in the ham cubes and grated cheese. When the pasta is cooked, drain and immediately add it to the mixture in the bowl, mix everything thoroughly again, and serve immediately.
