Black beans from Brazil

Ingredients for 6 servings:

  • 400 g beans, black
  • 3 tbsp oil
  • 3 clove(s) garlic, squeezed
  • 1 large onion(s), diced
  • 1 tomato(s), diced
  • 1 carrot(s), diced
  • 350 g bacon, diced
  • Salt
  • pepper
  • 1 sprig(s) parsley

Instructions

Working time approx. 30 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 30 minutes

Soak the beans for about 12 hours. Cook in a pressure cooker with 1.5 liters of water for about 45 minutes. Then turn off and let stand. Heat oil in a pan. Add the onions, garlic, tomatoes, and carrots and fry for 5 minutes. Add the bacon and continue frying. Stir everything into the beans and simmer for another 10 minutes. Season with salt and pepper, finely chop the parsley, and add it. Serve the black beans with rice. If you like, you can also serve them with cooked bananas (plantains), a traditional dish.
