Ingredients for 1 servings:
- 350 g flour
- ½ pack of baking powder
- 220 g margarine, soft
- 140 g brown sugar
- 2 tsp, heaped ginger powder

Place the softened margarine (whisk until soft if necessary) in a bowl, mix the sugar with the ginger powder, and fold it in. Combine the flour with the baking powder and knead everything into a firm, slightly sticky dough. I always mix everything by hand. Form walnut-sized balls and place them on a baking sheet lined with parchment paper. Using a fork moistened with a little water, flatten the balls crosswise (approx. 1 cm high). This amount is enough for about 1 baking sheet. Bake in the center of a preheated oven at 200°C (top/bottom heat) for about 12-15 minutes. Let cool and store tightly closed. (They keep well in Tupperware containers and stay crispy.) They’re perfect for 5 o’clock tea!
