English teatime classic, also delicious for breakfast or brunch, makes about 15 pieces

Preheat the oven to 210°C (gas mark 190°C). Line a baking tray with baking paper. Sift the flour and baking powder into a mixing bowl. Add the sugar. Rub the butter pieces into the mixture with your fingertips (don’t be alarmed by the appearance; it will be crumbly or breadcrumb-like). Make a small well in the center and pour in the milk. Knead the mixture into a fairly sticky dough and knead on a floured surface. Roll out the dough to about 2 cm thick or flatten it. Cut out scones using a round cutter (5-6 cm in diameter) and place the scones on the baking tray. It’s okay if they touch. If you don’t have a cutter, you can also cut out 5 x 5 cm squares. Brush all the scones with the beaten egg and bake for 15-20 minutes. Traditionally, scones are served with jam, cream, butter, honey, Nutella, etc., but that’s a matter of taste. You can also add raisins or chocolate chips to the dough for a variation. Just experiment.
