English tea rolls

Mix flour, salt, sugar, baking powder, and baking soda in a bowl. Add the fat in small pieces. Gradually add the milk and knead into a smooth dough. (Sometimes you need a little less milk). Let the dough rest in the refrigerator for about 15 minutes. Then roll out on a floured surface to about 2 cm thick. Cut out shapes using a glass or round cookie cutters (about 6 cm in diameter). Place on a baking sheet lined with baking paper and let rest for 5 minutes. Then brush with milk. Place in the preheated oven on the middle rack. Baking time: approx. 10 minutes. Electric oven, top and bottom heat 240 – 250 °C. Tip: Let the scones cool slightly but serve while still warm. Then cut in half. Spread with butter and strawberry jam.
