Ingredients for 4 servings:

  • 500 g flour
  • 1 tsp allspice, crushed
  • 1 pinch of clove(s)
  • 1 pinch of nutmeg
  • 1 pinch(s) of pepper
  • 1 tsp salt
  • 60 g margarine
  • 150 g sugar
  • 180 g currants
  • 30 g candied lemon, finely chopped
  • 35 g yeast
  • 200 ml milk, warm
  • 2 eggs

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Hot cross buns

Sift flour, spices, and salt into a bowl and mix in the margarine flakes with your fingertips. Add the sugar, currants, and candied lemon peel. Mix the yeast with the warm milk, add the beaten eggs, and gradually mix everything into a soft dough. Beat vigorously with a hand mixer, a wooden spoon, or by hand. Then cover with a damp cloth and let rise in a warm place for about 1 to 1 1/2 hours. Knead the dough lightly again on a floured board and divide into twelve equal pieces. Shape into round rolls. Let rise for another 10-15 minutes on a floured baking sheet. Brush with beaten egg and score each roll crosswise with a kitchen knife. Bake in a preheated oven at 200-220°C for about 15-20 minutes.
