Ingredients for 4 servings:

  • 400 g zucchini
  • 400 g tomatoes
  • 500g mozzarella
  • 1 clove(s) garlic
  • 2 tbsp oil
  • 4 tbsp olive oil
  • 2 tbsp herbs, frozen (8 herbs)
  • lemon juice
  • salt and pepper

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Slice the zucchini and fry briefly in the heated oil. Remove from the pan and set aside. Drain on kitchen paper, if necessary. Then slice the tomatoes and mozzarella. Arrange the zucchini, tomatoes, and mozzarella in alternating flakes in a dish or on a platter. Peel the garlic clove and chop very finely. Make a vinaigrette with salt, pepper, olive oil, and lemon juice. Stir in the chopped garlic and frozen herbs, season to taste, and drizzle over the prepared ingredients. Let stand for about 1 hour and serve. We’ve already eaten the above-mentioned amount for two people.
