Scotch Eggs

Ingredients for 4 servings:

  • 4 eggs, hard-boiled
  • 250 g sausage meat
  • 1 small onion(s), grated
  • 2 tbsp breadcrumbs
  • 1 egg(s), separated
  • 1 tbsp parsley, chopped
  • salt and pepper
  • nutmeg
  • 100 g breadcrumbs
  • Oil for frying

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Scotch eggs, ideal snack for parties

Peel the eggs. Mix the sausage meat, onion, 2 tablespoons of breadcrumbs, egg yolk, and parsley together thoroughly. Season to taste with salt, pepper, and nutmeg. Divide the mixture into 4 portions. With wet hands, press each portion in the palm of your hand until it’s large enough to enclose an egg. Wrap it around the eggs and press down firmly. Moisten the eggs with lightly beaten egg whites and coat in breadcrumbs. Heat the oil in a heavy saucepan, add the eggs, and fry for about 8 minutes, until golden brown and crispy. Remove and drain on kitchen paper.
